Summer Quinoa Salad

Quinoa [KEEN-wah] -High in protein and fiber, is not only versatile, it also tastes wonderful and has a nice crunch.

2 Cups cooked quinoa

1 cup cooked Garbanzo beans

2 medium tomatoes (diced)

2 medium cucumbers (diced)

2 cups loosely packed fresh basil leaves (finely chopped)

Optional- ¼ cup fresh goat cheese or Feta Cheese (crumbled)

For the Dressing

Combine- Juice of 1 lemon, Olive oil 4 tablespoons, Salt and black pepper to taste

Mix all the ingredients and add the dressing to taste.
