Lemony-Curried Quinoa

1 cup cooked Quinoa ( how to make perfect quinoa)

Curry Leaves almost 20, chopped or whole leaves as you like

Green chilies chopped to taste

½ cup red onion chopped finely

1 cup chopped carrots

½ cup green peas

Black mustard seeds 1/2 teaspoon

½ teaspoon turmeric powder

Ghee or coconut oil 2 tablespoon

Himalayan salt to taste

Lime/lemon juice to taste (optional)

Heat the ghee or coconut oil in a pan and add the mustard seeds. Let them splutter.

Add the chopped green chilies and fry for a few seconds, the chopped onions and curry leaves as well. Fry till the onions are translucent. (no need to brown them).

Add the carrots and cook for 3-4 minutes, then the green peas and cook till the vegetables are tender.

Add Turmeric powder and salt. Add cooked Quinoa and mix well. Add lime/lemon juice if using and serve hot.
