Dr Seuss’s Green Eggs

I live by Dr Seuss’s playful, quirky and surprisingly astute wisdom.

“You have brains in your head. You have feet in your shoes. You can steer yourself in any direction you choose.” – Dr. Seuss.

And I am passionate about adding a bit of green to everything I eat!

My version of Dr Seuss’s “Green Eggs and Ham”

Do you like green eggs without the ham

I just love them, Sam-I-am.

I like green eggs without the ham.

Would you like them for breakfast or brunch?

I would like them for breakfast or brunch.

Green eggsIngredients

2 whole eggs (preferably pasture raised)

Thin slice of Ginger minced (may be a bit more if you like)

1-2  cloves garlic crushed

1 ½ cup or a lose handful of mixed greens chopped (my favorites are Spinach Kale mix or Arugula or Pok choy or a mix of all of these)

Salt or coconut aminos to taste

White pepper to taste

A dash of hot sauce (Sriracha is my choice)

A pinch of turmeric optional

¼ cup cooked quinoa optional

Coconut oil for cooking

  1. In pan heat the coconut oil, add minced ginger. Cook till fragrant. Add two broken eggs. Season with pepper, salt or aminos, turmeric, hot sauce. Using a spatula scramble the eggs.
  2. When the eggs are ½ done, slide the eggs to one side of the pan. Add a few drops of coconut oil, and crushed garlic on the other side. When the garlic becomes golden brown, add chopped greens and mix eggs with the greens. Cook till greens wilt.
  3. Mix in the cooked quinoa (optional).
  4. Eat them for breakfast or brunch, eat them for your lunch, eat them with a little lime and eat them anytime!
